Sodium Metabisulfite

 

Sodium metabisulfite (Na₂S₂O₅) is a white or yellow crystal with a strong pungent smell. It is soluble in water and the aqueous solution is acidic. When in contact with a strong acid, it releases sulfur dioxide and generates corresponding salts. It cannot be stored for a long time as it will be oxidized into sodium sulfate when exposed to air.
