Sodium Metabisulfite

 

Sodium metabisulfite (Na₂S₂O₅) is a white or yellow crystal with a strong pungent smell. It is soluble in water, and the aqueous solution is acidic. When in contact with a strong acid, it releases sulfur dioxide and generates corresponding salts. To maintain its quality, it should not be stored for extended periods as it can be oxidized into sodium sulfate.
